This quick and easy sausage and potato skillet meal is perfect for leftovers! Sometimes I double the recipe so I have lots of leftovers because it’s great for lunches throughout the week.

Cut the sausage into ½-inch thick rounds. Cut the potatoes into 1-inch pieces, and the bell pepper into 2-inch long sticks.
Heat the olive oil in a large skillet over medium-high heat, add the potatoes to the skillet, and season with the garlic powder, oregano, parsley, salt, and pepper.
Cook the potatoes, stirring frequently to evenly brown until the potatoes are tender about 15 minutes. Remove the potatoes from the skillet and set aside.
To the skillet add the sausage, onion, and red bell pepper. Cook until the vegetables are tender, about 5 minutes.
Add the potatoes back to the skillet with the sausage, stir, and cook everything together for another couple of minutes.
Remove the skillet from heat and serve.
You can boil the potatoes for 5-8 minutes before cooking in the skillet to shorten the skillet cooking time.
